Booker T. & the M.G.s’ “Green Onions” was an unplanned recording by a group of musicians who never intended to form a band. “It was pretty much an accident,” guitarist Steve Cropper confirmed in 2014. “It was just one of those things that fell together by chance.” Nevertheless, the 1962 single from the album became the first #1 R&B hit for the gritty Southern soul powerhouse known as Stax Records. www.loc.gov

When George “Daddy Hotcakes” Montgomery sings “Mustard Greens,” his rich, rugged voice shifts from a call-and-response conversation about eating cornbread and mustard greens to lyrics about growing up in the country. Hotcakes developed his style wandering across the South and taking on various performing jobs on the road. He settled in St. Louis in the 1940s, where he continued performing on the streets and entertaining people in St. Louis streetcars. folkways.si.edu

The video for this song from "American Utopia" is a collaboration with the Detroit School of Arts, featuring the Vocal Jazz Ensemble and filmed in part by the students of the Radio and TV Dept. Speaking about the video, Byrne said: “When I saw what the DSA students did with my song, it completely changed the way I thought of the song. In face, it changed the meaning of the song — I realised it was about inclusion, welcoming and not being alone.”: www.youtube.com

This is a tribute to a soul food restaurant Jim Morrison ate at on Venice Beach called Olivia's, located on 2618 Main Street, Santa Monica, California. Morrison often stayed too late at Olivia's, where he liked the food because it reminded him of home and warmed his "soul." They often kicked him out so they can close, thus lines like: "let me sleep all night, in your soul kitchen." www.songfacts.com

From their beginnings in 2005, the Carolina Chocolate Drops revived the almost-forgotten Black string-band tradition and introduced this music to millions of fans across the world. The original band members — Rhiannon Giddens, Dom Flemons and Justin Robinson — learned their core repertoire straight from the source, an African American fiddler, Joe Thompson, then 85 years old, of Mebane, North Carolina. musicmaker.org

Written by Brian Wilson and Van Dyke Parks, the song was partly inspired by Wilson’s obsession with physical fitness in the late 1960s. In a contemporary article, he stated, “I want to turn people on to vegetables, good natural food, organic food. Health is an important element in spiritual enlightenment. But I do not want to be pompous about it, so we will engage in a satirical approach.” Another reported inspiration for the song was a humorous comment Wilson heard about the effect of marijuana turning him and his friends into a “vegetative” state. www.the-paulmccartney-project.com
